Thank you to Diane Carrasquillo, the fabulous pastry chef at Michael’s New York, for dreaming up this delightful dessert! Coquito flan de queso is a rich, mild, creamy, absolutely delicious flan that delights with the flavors of a classic Puerto Rican-style eggnog. Diane perfectly complements it with a bright, fresh mango sorbet, and then garnishes with meringue crumbs and a lovely mango coulis. How wonderful to enjoy such a refreshing seasonal dessert!
