This has got to be one of the brightest and freshest takes on halibut we’ve ever seen. The colors and presentation will have you salivating well before your first bite. Alaskan halibut, gently prepared as a confit, turns out more succulent and melt-in-your-mouth delicious than you can possibly imagine. Joining it on the plate are sunchokes, hon shimeji mushrooms, radishes, and a brilliantly bright parsley sauce that will have you savoring every last drop.
