Alaskan Halibut Over Oyster Stew

We love seafood, and so do our guests. Halibut is one of their perennial favorites, so each season we try to dream up new ways of preparing it.  This season at Michael’s New York we offer our perfectly seared, flaky, tender halibut fillet on top of an oyster stew.  Fresh Shrimp, Sunchoke, add Radish mingle through the broth and add their divine flavor.  We garnish with mache, and of ocurse, freshly chopped chives.
