Want a cool-weather dinner that satisfies deeply yet stays on the lighter side? Look no further than this incredible offering of plump sea scallops unexpectedly paired with earthy, rich forest mushrooms. We perfectly sear Maine dayboat scallops to create a delightful crust on each side while they stay tender and moist within, and then place them on a bed of snow pea leaves and sautéed wild mushrooms. A Thai vinaigrette gives the entire dish a surprising twist of bright, subtle spiciness.
