We’ve been serving our guests beet salads at Michael’s restaurants in since we opened our doors in Santa Monica and New York. This latest particular take from New York is the latest version from executive chef Kyung Up Lim, offering a savory play on yogurt and granola. He marinates the beets in Champagne vinegar with shallots, parsley, and chives to complement their sweet flavor.  Strained Greek yogurt and a savory housemade granola mix add delightful counterpoints, as does mild, buttery mâche.  Try this delightful, flavorful take on the classic beet salad. We think you will absolutely adore it.
