Seared Maine Dayboat Scallops

Savory, rich, gorgeous.

We took the flavor profile of these scallops to Thailand, for an incredibly delightful and inventive presentation. The scallops are served on a bed of forest mushrooms, an assortment of the best mushrooms the market has to offer each day.  A Thai vinaigrette provides that salty, sweet, herbaceous medley that sends this dish soaring. Fried basil leaves, fresh Thai basil leaves, and micro-greens garnish.  Truly, these are scallops like you’ve never tasted them before.
