What a perfectly harmonious blend of flavors and textures! For this summer-into-autumn salad, the kitchen of Michael’s New York marinates beets with a mixtures of shallots, chives and other fresh herbs, and vinegar, then tops the sweet roots with multi-hued roasted carrots from the farmers’ market, mache, and a sprinkling of savory house-made granola.
