Freshest Spring Salad

Springtime means it’s salad time.

From the kitchen of Michael’s New York, this simple salad epitomizes the light, fresh flavors and delicate textures of springtime. Tender Bibb lettuce leaves mingle with refreshingly bitter spears of Belgian endive, thinly sliced cucumber, chunks of buttery avocado, and shavings of breakfast radish. Toss it all with a light Dijon mustard vinaigrette, and you’ve got an eloquent expression of the season.
