Coleman Farms in Carpinteria, California, just up the coast from Michael’s Santa Monica and a mainstay of the Santa Monica Farmers’ Market just down Third Street from the restaurant, grows the incredible lettuces that form the centerpiece of this salad. Delicate, flavorful herbs—including the fresh chives Michael loves—intermingle with the leaves. The shallot-and-Dijon dressing is perfectly balanced and delicious.
