Butternut Squash Soup

A lovely, appealing presentation, don't you think?

To prepare this delightful warmer, the kitchen at Michael’s Santa Monica steams butternut squash and then purees it with crème fraîche, apple, and orange to produce a golden bowlful of the perfect combination of sweetness, earthiness, richness, and tang. Garnishes of chorizo chips, chives, and a swirl of that marvelous crème fraîche complete a casually alluring presentation.  Dig in!
