Scallops and Brown Butter

Seared Maine scallops are a must-have on our menu throughout each season. Our guests love these as a light dinner accompanied by our salads, or as a fabulous lunch. For winter, we serve the scallops with two types of squash, butternut and spaghetti, for a double dose of warm, subtly sweet flavor. Pancetta provides a hit of salty indulgence—and everyone knows bacon and scallops pair perfectly! Brown butter gives everything that final hit of richness and depth that really makes these scallops memorable.
