Our Classic French-Style Chicken and Pommes Frites

Bistro-style heaven on a plate.

This dish is the perfect marriage of Michael McCarty’s French culinary training and the role Michael’s Santa Monica played in the development of California cuisine. We grill free-range Jidori chicken from Petaluma over open flames, and then grace the crispy-skinned, juicy-fleshed results with fragrant fresh tarragon butter. As for those pommes frites, they’re shoestring-style: light, crunchy, and with fluffy-tender interiors. You simply cannot go wrong with this classic-meets-modern plate of food.
