A perfect organic egg yolk rises like the sun amidst the creamy, chewy-tender rice.

We crave mushroom risotto when the temperature begins to drop and the days draw in. It’s so satisfying and warming, yet understatedly elegant. As autumn approaches winter, Michael’s New York now offers a perfect porcini mushroom risotto. In a wide, shallow bowl, a gorgeous farm-fresh organic egg yolk nestles like a jewel in the center of the creamy rice, which we cook “loose” and never dense—so, as you pierce the yolk and it begins to intermingle with the hot risotto, the dish’s creamy richness is magnified. We freshly shave Parmesan to taste over each serving at the table. Wine suggestion: The Malibu Vineyard Pinot Noir cannot be beat for complementing the creamy, earthy flavors.
