Butternut Squash and Pumpkin Soup

The classic autumn favorite has never looked so beautiful. In the kitchen of Michael’s New York, we combine pumpkin and butternut squash to give the savory-sweet puree extra body and depth of flavor, pureeing it to unbelievably velvety smoothness. But that’s just the beginning. Defying the usual approach of just swirling some flavored oil or pesto on the surface, we add perfect little cubes of squash in a tic-tac-toe pattern, topping each with a perfect ruby-colored pomegranate seed. Lightly charred Brussels sprout leaves (plus fresh chives, of course) complete the picture with contrasts of flavor and texture. Every spoonful looks and tastes just like the season. You can’t help but crave it.
