Fig Upside-Down Cake at Michael’s New York

November 1, 2011

A fresh and beautiful take on a dessert classic.

You’ve enjoyed pineapple upside-down cake, right? So have we. But, devoted as we are to fresh seasonal cuisine at Michael’s New York, we decided to put a new spin the classic with a sumptuous autumn fruit: figs. Inspired by the plump, gorgeous fruit at the farmers’ market, we replaced the traditional tropical ingredient with fresh figs steeped in Calvados. The resulting dessert is nothing short of divine—rich, sweet, and just a little bit sticky with its caramelized juices. And what’s that melting so enticingly on top of the warm-from-the-oven individual portion: a generous scoop of house-made buttermilk ice cream, the perfect complement.
