Tres Leches Cake at Michael’s New York

Tres leches cake is a traditional Latin American dessert that Diane Carrasquillo, our pastry chef at Michael’s New York, has been making for years. She brought her recipe and know-how to the kitchen and then tinkered with it until she created the most sinfully delicious, moist, sweet cake you’ve ever tasted. As the Spanish name implies, the delicate sponge cake is drenched in three different kinds of milk: evaporated milk, sweetened condensed milk, and a delicate touch of heavy cream. After all the rich moisture has been absorbed, Natalie tops each individual portion with a beautiful swirl of meringue, adds alongside it a scoop of dulce de leche ice cream, and artfully decorates the plate with some stripes of caramel sauce.
