Mediterranean loup de mer is a fresh, mild, white fish that we absolutely love. This presentation from the kitchen of Michael’s Santa Monica features the subtle deliciousness of summer Mediterranean flavors.  The last of the sweetest Summer cherry tomatoes lightly roasted, fresh pea tendrils, and sunchoke puree accompany the fillet with their perfectly harmonizing flavors. We bring it on home with a touch of garlicky, peppery Catalan-style Romesco sauce that will have you licking your lips with every bite.
