Summer Porcini

This seriously delicious vegetarian main dish from the kitchen of Michael’s New York could convert even the most devoted meat lovers. That’s no less than you’d expect from some of the meatiest mushrooms around, porcini. (The name, after all, is Italian for “little pigs.”) The composition is delightfully savory and fresh, with just the right amount of creamy indulgence. Roasted summer porcini are the stars, but we surround them with other seasonal standouts including asparagus, baby squash, and English peas. A rich thyme jus and grated Parmesan garnish the whole thing. It’s definitely worth trying, even if you started the evening thinking of steak.
