Santa Claus Melon and Proscuitto

Santa Claus has definitely come to town!

This appetizer is so fresh and delicious that, especially if you’re dining with a larger party at Michael’s New York, you may need a few orders for the table. We’re right at the peak of the season right now for Santa Claus melons, a large oblong variety with skin that looks a bit like a watermelon and a tender flesh that tastes like the sweetest honeydew you’ve ever had. Divine prosciutto, a tart lime vinaigrette, freshly shaved Parmesan, and micro greens complement the fruit perfectly. Bon appétit!
