Asparagus and Egg

Not your everyday asparagus!

When asparagus is in season and we can offer it to you, we like to go all out and really gussy it up. This appetizer will have you licking the plate clean!  Peeled, perfectly tender asparagus are slathered with our most delicious tarragon vinaigrette. Then, we top the spears with smoked ham and a fried egg to make an incredibly luscious combination of flavors—a delectable starter you won’t soon forget.  A few delicate touches of other seasonal vegetables, including shaved radish and peeled favas—plus plenty of chive, of course—complete in irresistible seasonal presentation.
