A gorgeous pan-seared red snapper fillet rests atop a sea of bouillabaisse made with lobster, squid, and gorgeous peewee potatoes from the farmers’ market. The fish, flown in fresh from Florida, has a mild white meat that delightfully drinks in the rich juices of the classic Provençal seafood stew.
