Slow-Poached Atlantic Halibut

May 11, 2011

Doesn't this look like the perfect expression of springtime?

The taste of spring! The sun is shining, winter has finally fled the city, and it’s time to eat accordingly. The farmers’ markets are filling up with a fresh new bounty—including tender English peas and flavorful morels—and we feature those great ingredients in this incredible main dish starring Atlantic halibut. We slow-poach the fish for the moistest, most tender fillet you can imagine—it literally melts in your mouth.  Springtime vegetables and the most delightfully fresh-tasting Italian parsley sauce give this dish the bright flavor you expect from such gorgeous ingredients. It’s a must-try special for spring.
