The farmers’ markets are filling up with a fresh new bounty—including tender English peas and flavorful morels—and we feature those great ingredients in this incredible main dish starring Atlantic halibut. We slow-poach the fish for the moistest, most tender fillet you can imagine—it literally melts in your mouth.  Springtime vegetables and the most delightfully fresh-tasting Italian parsley sauce give this dish the bright flavor you expect from such gorgeous ingredients.
