Fresh Pea Soup

So fresh and so bright.

What could be a more beautiful expression of springtime than fresh pea soup? We really nailed the flavor profile by complementing the peas with the brightest, most delectable lemon crème fraîche. And then, because peas and carrots always go so well with one another, we add a garnish of sweet roasted carrot. The final hit of flavor is deliciously salty, meaty pancetta, cut into tiny dice and sautéed to highlight the fresh pea puree in the same way that split pea soup is often accented by smoked ham.
