Perfectly Seared Arctic Char

A delightful main dish full of surprising flavors and textures.

Arctic char tastes just right when you give it the perfect pan-sear. We quickly cook the exterior of this fillet to produce a delicious crust and tender, moist, flaky interior. Lately, we’ve been experimenting with whole grains of all kinds, and this superb seafood fillet gets an ideal companion in creamed spelt, an ancient ancestor of wheat. The grain’s wonderfully rich, earthy flavor is complemented by an incredibly smooth texture. We add some Savoy cabbage and a simple sauce vierge to brighten the flavor profile of this exquisitely well-balanced dish.
