A perfect meal!

We often love to serve our pork as chops, on the bone. But for this special presentation of the outstanding Kurobuta pork from Snake River Farms in Boise, Idaho, we choose to highlight a beautifully tender, flavorful pork medallion. We smoother the succulent meat in a grainy mustard sauce that is just a little sweet, and top it with a caramelized shallot. A delicate mix of baby greens and cauliflower brings this plate together to make a most delightful dinner option. The other white meat’s never looked so appealing!

    I’ve been on a cauliflower kick lately, but I never thought of adding some caramelized shallots into the mix. The mustard sauce just looks wonderful on the pork.
