The base for this decadent lunch special is creamy risotto, perfectly cooked to a “loose” consistency that is creamy but still fluid enough to spread out when ladled onto the plate. Flavored with stinging nettles, the risotto tastes fresh and bright, providing an ideal complement to sautéed veal sweetbreads—meaty, savory, and ever so tender.
