Lunch Special at Michael’s New York: Veal Sweetbreads with Linguine Carbonara

Savory, salty, tender, delicious!

We sauté our sweetbreads because it’s the best way to showcase their incredible texture, crusty and golden on the outside, meltingly tender within.  As a perfect backdrop for the delicious sweetbreads, we add a bed of al dente linguine tossed with a light and delicious carbonara cream sauce, dotted with chopped chives, parsley, and spring onion. Of course, we don’t stop there, garnishing the plate with generous shavings of black truffle that add another heady layer of earthy, aromatic flavor. What a great lunch!
