Squab and truffles pair so well together because they both have earthy, deep flavor profiles. At Michael’s New York, we love to serve the combo, along with mushrooms, in several ways, including this combo featuring sautéed pieces of the poultry  combined with both Japanese-style tempura mushrooms and a classically French, deeply flavorful mushroom confit. The result: a mushroom lover’s paradise, especially when the whole presentation is topped just before serving with freshly shaved, incredibly aromatic black truffles.
