Perfect Ravioli

A classic flavor combination done perfectly.

When our chefs prepare home-made pasta, we can’t resist it. When they fill their pasta with a mixture of spinach and ricotta, it’s a done deal. These ravioli from the kitchen of Michael’s Santa Monica take those familiar and damn-near perfect flavors to their most elegant and refined state. Check out the brown butter and the garnish of toasted pine nuts and some gorgeous shaved ricotta salata and you’ll understand why this might be one of our all-time favorites. It’s fabulous to share with the table before a a dinner with friends! (That’s not to suggest that we’re willing to share our plateful of them!)
