Ellensburg Rack of Lamb, the finest, meatiest, most delicious lamb available is ours to serve you!  It tastes marvelous with lots of Rosemary, so that’s exactly what we’ve done.  We sear it with fresh rosemary to lock the gorgeous flavors together and the rest of the dish comes together quite simply.  Roasted Root Vegetables provide an earthy, subtly sweet background for the meat.  To cool the palate and contrast with the meat, Kyung and the team whipped up this incredibly fresh Tzatziki for you to dip each bite in.  A Rosemary Jus moistens the already tender meat, takes the vegetables to the next level, and provides the last hit of aromatic rosemary flavor.
