Our miso-glazed Scottish king salmon at Michael’s New York is a truly stunning entrée. The miso glaze concocted by Kyung Up Lim and his team is both savory and sweet, with that perfectly mellow flavor that you only get from starting with the absolute best miso paste. We pair it with all the classic Japanese vegetable accompaniments: delicately steamed bok choy, sautéed shiitake mushroom, and fresh, slightly salty edamame. Then, we finish the whole presentation with a surprising coconut-pumpkin seed reduction that harmonizes beautifully with the roasted miso glaze. You must try it!
