The Fanciest Celery Root Soup

The luscious puree with its delectable garnishes looks like an edible work of modern art.

Baby, it’s cold outside—and we want to feel warm and cozy, craving creamy, dreamy pureed soups packed with flavor. That’s just what the kitchen at Michael’s Santa Monica delivers right now, with a fabulous celery root soup that gets the full Michael’s treatment. Once our superb, smooth puree is ladled into the bowl, we garnish it with perfectly seared, incredibly decadent bites of foie gras, which add rich, meaty, slightly salty bursts of flavor. For final garnishes, we scatter on toasted peanuts and add a drizzle of bourbon maple syrup. Now, if this isn’t winter food at its finest, we don’t know what is. Enjoy!
