A Perfect Winter Salad

Check out those gorgeous flecks of poppy seed in the lemony vinaigrette surrounding the giant mushrooms!

We’ve been creating variations on this light-yet-robust salad as specials all fall and now into winter, because our guests are loving it. In our latest version, we add a super-fresh, bright lemon-and-poppy-seed vinaigrette that goes brilliantly with the earthy mushrooms. We cover the beautiful braised king trumpet mushrooms with delicate, spicy arugula leaves—and then top it off with freshly shredded Parmesan to complete a perfect way to start a meal at this time of year.
