Get ready for heartwarming fall eating at its absolute best from the kitchen of Michael’s New York. We serve delightful squab from California with maitake mushrooms, spaghetti squash, pearl onions, and a  cranberry jus. It’s a plateful of all the flavors we want to be eating right now: meaty, earthy mushrooms, mellow-sweet squash, aromatic and tangy onions, and the tart-sweet bite of cranberry, all coming together to highlight the deliciously rich, tender squab meat. The result: hearty, satisfying, and oh so autumnal.
