Comforting, delicious, warming, and still magically light, this red snapper presentation is an altogether modern take on the classic French bean-and-meat stew known as cassoulet. A steamed fillet of red snapper poises atop a chorizo-and-cannellini-bean cassoulet flavored with rich onion stock. The chorizo and white beans contribute an incredibly rich and savory flavor in contrast to the delicate, tender fillet. It’s a perfect entrée for crisp NY autumn weather.
