How farm fresh does this gorgeous plate look?  Big Mike took this picture on his iphone during a recent dinner at our Sm restaurant.  And boy was he pleased with his meal!  Delicious Manchester Farm’s quail, our absolute favorite farm to source this delicious, tender, flavorful (and never gamey!) bird.  The quail is roasted, with the skin on, to create the most moist and rich meat imaginable with a delicious, chewy-crunchy crust.  The bird rests on a bed of beluga lentils delicately drizzled with chicken jus.  As the final touch, the plate is garnished with Bill Coleman’s fresh purslane.  It’s a must try for a delectable dinner.
