Colorado Rack of Lamb at Michael’s Santa Monica

Superior Farms Colorado rack of lamb makes the most delicious dinner when grilled over live flames and then allowed to rest so the bubbling juices have time to settle back into the meat. This cut from one of our fine providers is so full of flavor and so perfectly tender that it would be fabulous on its own. But, of course, this is Michael’s Santa Monica, so you know head chef Mikey Stern had to add beautiful, complementary elements to the plate. This version features a luxe take on rice and beans, given an exotic North African flavor with harissa (Tunisian hot chili sauce) and merguez (a spicy lamb sausage common to Algeria and its neighbors). The Santa Monica team finishes the plate with watercress and heirloom cherry tomatoes, as well as a generous ladle of lamb jus.
