Burrata is the new Mozzarella.  No one is doing tomatoes with mozzarella this Summer and transition into Fall, instead, it’s all about the Burrata.  Burrata is a fresh, white milky cheese with a runny interior and a mild, creamy flavor.  Drizzled with Olive Oil and 25-year aged Balsamic, Sea Salt and freshly ground Pepper, the flavor is pure perfection.  Add in juicy, sweet heirloom tomatoes from the SM farmers’ market, and you have the must dish this Summer.
