Swordfish for Summer at Michael’s Santa Monica

Light and healthy!

We love grilled swordfish. The meat is tender and delicious but also so meaty and almost steak-like that it can stand up well to the grill, so we generally cook it this way during the summer months. We serve our gorgeous grilled swordfish fillet atop a puddle of full-of-flavor Romesco sauce and beautifully sautéed spinach, then add roasted heirloom potatoes and tomatoes for an excellent balance of flavors, textures, and colors. Add a chilled glass of rose and you’ve got an ideal summer dinner to enjoy on the legendary garden patio of Michael’s Santa Monica.
