One of our favorite things to do is to create imaginative, delicious lunch specials featuring fresh seasonal ingredients for our devoted lunch crowd. This amazing dish from the kitchen of Michael’s New York starts with the best salmon available, seared with the skin left on to create a crispy, flavorful crust atop the rare fillet. The preparation is light and summery, with carrots, heirloom tomatoes, cucumbers, and basil complementing the fish. Seasoned with sea salt, freshly ground pepper, and a delicate drizzle of our extra-virgin olive oil, this makes a perfect, refreshingly light yet thoroughly satisfying lunch for a hot day in the city.
