We love the Manchester Farms Quail our kitchen has been using because the meat is so flavorful, deep and rich. In this appetizer, our chefs combine quail wings and drumsticks, perfectly cooked for maximum flavor and texture, with rich, savory, sweet, and salty Jamón Ibérico. Beautiful fresh goat gheese from Murray’s, and heirloom tomato seeds add, respectively, creaminess and earthy tang. The dish is finished with a drizzle of our 25-year aged balsamic vinegar. ¡Buen provecho!
