Summer Sweetbreads

This makes the most delightful starter to any meal.

Summer squash and fresh English peas add delightful hits of bright sweetness to offset the heavenly richness of sweetbreads in this seasonal special from Michael’s New York. Curled beneath the plump sauteéd sweetbreads, the squash is sliced into “linguine” and tossed with a delicate green sauce made from peas. The effect is subtle, the flavors pure and delicious. To us, the perfect bite of this dish combines  a tender ribbon of squash, a single English pea, and hearty bit of sweetbread swiped through the lovely green puree. We know you will love it!

The delicate lake upon which the sweetbreads rest is made from pureed English peas.
