White Asparagus and Black Truffles

Of course, Michael loves his white asparagus topped with a delicate tangle of mache and generous shavings of truffle.

White asparagus is a fleeting delicacy, so hurry to Michael’s to get them while you can. This beautiful presentation is pure luxe. The perfectly steamed, fork-tender spears rest in a pool of sinfully rich beurre blanc. On top, Michael insists that we shave generous amounts of black truffle, then add fresh, sweet English Peas, beautiful rosy pearls of salmon caviar, and some baby mache leaves for good measure. It’s a decadent, delicious appetizer that presents a wealth of extravagant ingredients in perfect harmony.
