More Striped Bass (We Can’t Get Enough!)

Wild striped bass is one of favorite fish right now and—as you can tell from other posts over the past couple of months—our chefs have been working tirelessly to create incredibly inventive dishes that showcase the qualities of this wonderful fresh seafood. With its flaky white meat and mild taste, the fish provides a perfect canvas for creating unique flavor compositions.

Michael’s New York head chef Kyung Up Lim and his kitchen team have created this latest inspiration. A citrus salad featuring heavenly seasonal grapefruit and orange segments and fresh herbs, and a light, brightly flavored watercress sauce delight the palate with refreshing colors and flavors that are perfect for the season—and for one of our favorite fish!
