Quillayute River Salmon

Can you guess what that white little sphere on top of the salmon is?

Michael’s New York chef Kyung Up Lim has taken this absolutely stunning salmon from the Quillayute River in Washington State and created a fabulously fresh seasonal celebration of delicate Asian flavors. He accents the fish with a crab salad and a sprinkling of fresh uni. Beautiful  honshimeji mushrooms, sugar snap peas, and thin slices of radish make picturesque and delicious garnishes.

It's a honshimeji mushroom!
