The latest quail presentation at Michael's New York: flavor on flavor on still more flavor!

Manchester Farms provides Michael’s New York with perfect quail. This tiny bird makes for one delicious presentation after being roasted and basted in a blackberry jus. Our chefs place the quail on a bed of the ancient Mediterranean grain called farro, into which they have folded sautéed lardons of bacon, a perfect complement rich, salty flavor and crunchy-chewy texture  to the tender, sweet game bird. Heirloom carrots, rhubarb, and spinach puree finish off this hearty, flavor-packed plate.
