Olive Oil-Poached West Coast Halibut

Our olive oil-poached halibut is a fabulously light and flavorful main course that is perfect for springtime’s warmer weather. We start with beautiful, fresh west coast halibut, which we poach in extra-virgin olive oil from Italy. The fish turns out beautifully white and flaky, with the mildest flavor. Fresh English peas, oyster mushrooms, and rainbow chard surround the fish with the beautiful colors and flavors of the season. Creamy polenta spiked with perfectly crisp cubes of pancetta take the flavor of this dish to the next level. Enjoy!

Garnished with a beautiful fresh arugula leaf.
