Want to go on vacation? Take your palate there with this fabulous tropical treat. Amanda Moreno, our fabulous pastry chef at Michael’s New York, created this dessert to transport your senses to a tropical getaway. She takes a luscious, crunchy meringue and tops it with a beautiful quenelle of rhubarb sorbet. Cubes of kiwi, mango, and black-and-white dragon fruit surround the meringue, and a luscious passion fruit sauce adds the final dazzling touch. If you can’t make it to the Caribbean or the South Pacific, come on over to midtown, close your eyes, and take a bite of the tropics.
