How stunning! Can you believe the vibrant colors?

When the waiters brought this cod to our table, we were blown away! The plate was so gorgeous that we almost didn’t want to dig in—that is, until the luscious aromas reached our noses. The smashed scallion-infused new potatoes provide the perfect counterpoint to the flaky, light cod, anchoring the dish and giving it body. Garnishes of watermelon radish, fresh scallions, and market beets provide dazzling color, flavor, and texture while perfectly accenting the fish.
