Kyung Up-Lim has outdone himself with this appetizer at Michael’s New York! We couldn’t believe the fresh flavor he creates through this inspired combination of ingredients. The contrast between the sweet, clean flavor of the sushi-grade hiramasa (true Japanese amberjack yellowtail), the briny sharpness of the capers, and the mixture of fresh chives, flat-leaf parsley, and tiny dill sprigs creates one of the freshest takes on sashimi we’ve had the pleasure of eating.
